I love making a big breakfast for my family on a lazy Sunday morning with waffles, eggs, bacon, piles of fruit, juice, milk, tea, and all the toppings, because nothing says “I love you” more than a pile of food waiting for you when you wake up.
My favourite waffle recipe is from the classic recipe book, Joy of Cooking. The waffles come out light and fluffy and delicately tasty.
Ingredients:
- 1 3/4 cups Robin Hood cake flour (sift before or give it a good stir with a whisk)
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp sugar
- 2-7 tbsp melted butter or salad oil
- 1 1/2 cups milk
- 3 eggs, divided, yolks and whites
- 1/2 tsp vanilla (this is my addition, and is optional)
Start by putting a bowl and mixer whisk attachments in the freezer approximately 20 minutes before you start. Plug in the waffle maker just before you start putting the ingredients together, as this is a quick recipe to make.
Instructions:
- In a large bowl add the dry ingredients: Flour, baking powder, salt and sugar.
- Stir all ingredients with a fork or whisk once all ingredients are added.
- Beat the egg whites in the cold bowl until they’re stiff, but not dry.
- Melt your butter on the stove or in the microwave (microwave for 10-15 seconds at a time).
- Add 3 egg yolks to the milk and beat well. Add the melted butter and mix well.
- With a hole in the middle of the dry ingredients, pour in the milk egg mixture and combine quickly with a few quick strokes. The batter will look lumpy and that’s ok. Do not over-stir the mixture.
- Fold your beaten egg whites into the large bowl, with only a few quick strokes. The batter will look lumpy. Perfect!
Follow the directions for your waffle maker. The recipe makes 6 large waffles.
I tend to add around 5-6 tbsp melted butter, as I find they do not stick in the waffle maker that way. Plus, I add a half teaspoon of vanilla to the milk mixture for an extra touch of flavour.
My fruit of choice are strawberries, blueberries, bananas and raspberries, but any fruit is good fruit. While my kids love peanut butter and syrup on their waffles, I like to pile on the fruit topped with some syrup. But you get to choose here. I also like to add a protein to the meal, which in my case, usually means a lot of scrambled eggs. But again, you can choose what protein works best for you and your family.
